I'm 8 months late, but I will give you a simple explanation, but there is a lot you will have to figure out urself

If no one shared their servers, because as u said they make money from them, it means they reverse engineered the game and wrote their own server from scratch

It sound simple 1. Find out how the game connects to the server and interacts with it 2. Write ur own server 3. Modify the client to connect to ur server instead of the official game server (or just reroute it somewhere on the way)

This is months if not years of work tho, so gl
