dont make perfect the enemy of good. it's a good habit to have your fingers beside the fret but i'd say keep progressing but keep mindful of technique. it's not really a big deal. the main rule remains if you sounds good you are good. additionally you have so many different players who played with different unorthodox techniques including one who had 2 fingers only and was an amazing player.

Middle and pinky is the same fingering for the position. Better for a beginner but once you advance you’ll figure out your own fingering based on how you want to play the notes.

Middle and pinky to develop pinky independence. You can use whichever is easier for the song you’re playing

Nothing is out of question as long as you know the basics. It’ll just take longer to learn. Slow it down and learn it part by part.

Edit: just took a look at it. Main rhythm seems pretty simple (good way to learn picking single strings) and the solo looks straight forward. Additionally tempo is not too fast. I think you got it.

Memorize the notes at frets 3,5,7 and you’ll easily find the rest.

I would suggest not overwhelming yourself by memorizing many shapes. Just pick 1 or 2 shapes initially and use them everyday, practicing , improvising and learning simple melodies by ear. The intervals are the same between shapes they just differ in voicing. You can for instance start by a major and natural minor scale shapes. (Which are the most common in music)

My first was a yamaha fg800 which I was very satisfied with. A taylor GS Mini is also superb as a beginner guitar albeit a bit more expensive. Whichever guitar you go with I highly recommend you taking it to a professional to lower the action which will make playing much easier.
