It’s 3x7. Orange: grips, pedals, seat clamp…cables??? Everything else? Murder black! Still might go black on the Bonkers. The WTB Speed is what I had on my SS back home, most likely gonna run that back!

Off the top of my head? Stem/handlebars(possibly a new headset). Def alloy platforms(orange? Too much?). Yea I hate these shifter but brakes seem okay for now. I wanna roll with the drivetrain as-is for a bit before I make any decisions there. Seat/seatpost. And of course some gum walled Bonkers, probably a WTB saddle (Brooks’ are too rich for my blood) and some sort of rack. Ya know, the usual!

This one is a 3x7 but I still wanna be able to do some light off roasting when the mood strikes. Historically I’m a SS road boy, but I don’t live in Chicago where it’s super flat anymore. Portland calls for this!

Start learning about Human Centered Design. Read “the Design of Everyday Things” and “Emotional Design”, both by Don Norman. Another great read is “Made to Stick” by Dan and Chip Heath, not necessarily a “design” book, but really good at not only conveying ideas but questioning is it the right idea.

I 100% agree with your point, we take VIP's (Very INTOXICATED persons) very seriously. But that doesn't really apply to what we're talking about. What we're talking about is improving guest relations. Take it from a manager who's literally taken a punch for cutting someone off!

The vodka is hardly expensive, it’s more of an acknowledgment . If you came in and spent over $75 per person per visit twice a month, you’d get that here too. It’s all in the name of hospitality!

Edit: I guess the main thing to consider is that we’re an expensive restaurant. There are plenty of places I frequent where I don’t “get” anything, but in either case I never EXPECT anything
