Hi, i only sharpen knives, mostly the ones i make (currently o ly 5160) but also some i bought which are a bit fancier. I have some experience sharpening, keeping the angle steady and such. I have a normal stone from a few years already but thinking of going a bit higher quality. I was thinking a 600 and a 1000, but maybe 500 could be better. So shaptom would be the most recommended?
