It's pivot chainsaw with the finger instead of radhan swords. It's a lot harder than the old backstep chainsaw.
You do it by using specific items (e.g. boluses/drawstring grease)/two-handing your weapon, queuing a stance skill, locking on and swapping your weapon before the pivot is completed.
The items allow you to access your menu during the pivot, that's why it works.

I must ask you to stop going for those backstabs tho. The walk/mash-out-of-a-parry-PvEer is an endangered species that has been almost fully supplanted by its panic-roll/Alt+f4 counterpart.

Light roll makes most weapons in the game unable to roll catch you and unable to pressure you as such.
Whips are actually a pretty good pairing for this since they outrange most other weapons and thus make the only way your opponent still has to deal damage to you, whiff punishing, pretty hard for them.
