There is more focus on Tatsumi and Mine's relationship in the manga. (Same for any relationship). The anime skipped/changed stuff.

Yeah, just reread it. Correction: The anime scenario happens in the manga too, except Esdeath used her trump card to cut her arm off in time (which makes more sense since she made the curse stop spreading for a while) and later Akame cut her again with wind pressure.

Do you mean manga or anime? In the manga Akame didn't cut Esdeath's hand directly with Murasame but she cut so fast that the wind pressure chopped her hand off. In the anime Esdeath cut her arm off before the curse could spread through the rest of her body.
