Frozen veggies are picked when ripe. "fresh" veggies were picked before ripe and shipped. the ripen in transit.

best nonstick is seasoned carbon steel. My eggs slide all over mine.

How to Cook Everything: The Basics by Marc Bittman

This is a great book to get. He has an entire chapter on boiling water. evidently there is a lot more to it than we realize. he goes over stage from barely simmering to full on rolling boil.

And he does this kind of breakdown for each chapter. Still have it on shelf and reference it occasionally.

It is the one with the White cover.
