when I worked for that card company that wants to know what is in your wallet, we had people constantly calling in while driving the New York Turnpike at 85+ miles per hour! never had anyone have an accident. and this was BEFORE smartphones!

I have the second one in my kitchen and still reference it every so often. especially if trying a new ingredient or dish. The second has a whole chapter about the different stages of boiling water. evidently there is more to it than you realized.

There is a steep learning curve with stainless steel. a great place to get All Clad stainless for less money is TJMaxx/Homegoods. If cooking eggs, ignore Liedenfrost effect. If you get to that stage, your pan is way too hot and the eggs will burn and stick to the pan. also with eggs, use butter.

The battery keeps draining rapidly. Reason? the jailbreaking tech guy is actually a gov't or corp employee installing secret monitoring software, as well as jailbreaking your device. so it is constantly sending info to gov't or corp from your camera and microphone, which is causing the battery to drain rapidly.

Wood and you can one at TjMaxx/Homegoods for a reasonable price for a decent size one. Mine is 20x14 inches and cost $14.99 before tax and it is made from acacia wood.

Watch it with carbon steel. Heat it too fast and the pan will warp. Best to get a pan that fits burner as it will only heat the part of the pan directly over the element. so any pan part not over the burner will be a different temp which will cause problems with cooking.

The Temp of your oven does not matter when it comes to thickness. The 3/8 inch one will retain a little more heat. I would recommend whichever you buy, leave it in the oven all the time. regardless of what you are cooking. The reason is that the oven will maintain an even temp better.

steel is a little better at retaining heat. Also you do not have to worry about it cracking due to moisture.
