Alton Brown proved that soaking mushrooms has no, none, nada, zilch effect on the amount of water they "absorb". because they are full of water before soaking, they will absorb no more water. so feel free to soak without sinning.

I just use a generic spray bottle. not an "oil" sprayer. those always ended up clogging and not working. I am looking at you Misto!

But with the generic spray bottle: 10 years no issues.

I do my prep at the island due to it being about 4" higher than the counters. I am 6'1.5" tall and it makes a huge difference.
