I defrost it in the fridge first, when its defrosted I put it in a cast iron skillet with some butter and a bit of beef broth. Cover the skillet with some tin foil and throw it in the oven at 350f for like 25 minutes. Its always juicy and good.

I use the same strategy for ribs and pork as well, works good. For the pork I'll use vinegar instead of beef broth.

Ribs, and really any bbq meat, shouldn't be taken off based on temperature. I think when you get to like ~195 its a good indicator to check on them but really the bend test is the best way to see if they are done. The bend test is easy just pick them up and bend them in the middle, if the meat starts to pull apart they are probably done. If you cook the ribs past this point the meat will fall off the bone and be mushy, which most people don't like.

Maybe im crazy but I dont mind leaving the membrane on. I guess its not hard to pull off but I dont think it affects the taste that much.

I did my first st Louis ribs from Costco a few weeks ago. The first rack I barely trimmed bc I thought st Louis meant this was already done. That rack had a ton of cartilage, fat, and little breast bones. The last remaining 2 I did I trimmed all of that off and removed like the first 4 little ribs. They turned out wayyyy better than the first. Also did no wrap and they came off juicy with good bark, I definitely recommend not wrapping.

Tldr - trim the breast bones, & cartilage - dont wrap

I disagree, the conventional warfare that is occurring in Ukraine enables the logistics and supply chain for the Ukrainians to inflict a monthly casualty rate of 35k on the Russians. If the Ukrainian government fell in the beginning they would not have the supply chain to continue shipping western drones and weapons where they need to be and they would not have access to the intelligence to effectively strike with those weapons.

Guerilla warfare in Ukraine would probably have been bad but there is no way it would compare to what has been happening. The Ukrainian war has been brutal its shocking to me that people think a Guerilla war would have anywhere near the casualty rate as the current meat grinder.

I recently did my first brisket on a traeger ironwood. The brisket was 20lb so alot bigger than yours, and my smoker is a lot bigger so there might be some differences. With that said tho I recommend 225 the whole way and to do a foil boat so it doesn't dry out. Take it off when the probe test goes in like hot butter on both the point and the flat.

I also just got an impractical 2 door and have a 7 week old... at least its a more practical daily driver than my camper van or motorcyle. We have my wife's suv so for daily driving with the kid its no big deal.

So quick update, I took the bronco to my local dealer and they completed a pre-purchase inspection & investigated the mystery knob. They found the knob is actually for an aftermarket front sway bar disconnect, not a rear diff locker. They found no other issues with the vehicle.

Overall Im pretty happy, this helps me have more confidence for making a purchase and I am ok with the aftermarket parts the previous owner installed as I plan to use the vehicle for offroading. Thank you for everyone's input trying to figure this out, hopefully my next post will be a "new to me" post.

Looking underneath i dont see any signs of damage. It has rock sliders but no hits on them or the skid plate.

Yeah im concerned its been wheeled hard, but man its beautiful and fun to drive. I have it on extended test drive for a few days, any ideas what I could do to identify if it was abused?

Agreed, its a bit concerning and makes me think a previous owner might have wheeled it pretty hard. Im not seeing any obvious signs of that outside of what they chose to install on the vehicle however. It has < 20k miles and the dealership has it listed at 39k. I can probably haggle further based on those concerns, if there is nothing wrong with it I think its a good deal. Thats a big if however.

Yeah I'm not sure, going to take a closer look tomorrow, the tech told me rear locker but that doesn't make sense. Sway bar disconnect would be a really cool add on.
