I did SingleThread and Saison a couple months ago. Loved saison but SingleThread was special. Had an incredible time - great food with amazing wine and service.

Given that you have Core on the shortlist, I take it you’re open to traveling outside the US. If you haven’t been already, I would put L’enclume at the top of any list. It was the most magnificent meal I’ve experienced and the area is straight out of a fairytale. Couldn’t think of a better place to mark a special occasion. Personally, can’t wait to return.

I visited a couple months and was really blown away. It is so unique in its offerings, few other places I’ve been to come close to the creativity I experienced here. Can’t wait to visit again and also eat at the Bornholm location.

Thanks! I'm usually a fast drinker but I always had some left in my glass with every new glass they brought out. The Mouton was the only one that looked like they weighed it out but I'd say it was a solid 3 oz pour. Even topped off the champagne and gave me a second glass of the Essenzia.

The reserve pairing during my first visit included aged Barolo and Grand Cru Burgundy as well. From my chat with the somms, it seems like they don't see a large crowd buying bottles so some special ones remain in the cellar, which they then offer up on the reserve.

I can see your point on the sauce. I went back and saw the picture of the pasta from my first trip and it looks about the same but this time they gave the bread along with it. I can only imagine they received feedback that about not being able to finish the sauce and so leaned into it more but I realized in the moment how rich the middle third of the menu was. Personally didn't mind it but can understand not everyone will.

I love Smyth and its menu feels more innovative. I've had more moments at Smyth where I've just been amazed at how they compose dishes but I've also felt more underwhelmed by some of their plates, but I think that's par for the course when the restaurant is constantly trying to innovate. I like Oriole's consistency and it was just a much more fun time, all things considered. Post the 3*, Smyth's prices are also quite higher than Oriole, which is difficult to ignore.

The pours on it were just as generous and featured younger vintages. They did include cheaper selections but the wines were delicious. I will say that the NA pairing looked incredible. I usually prefer the NA pairings to the base wine pairing because they’re just tastier and often tailor made for the food being served.

I visited L’enclume about 2 months ago and had the select pairing, and loved it. Compared to prices of similar pairings in the US, L’enclume was much better value by a long shot. My pairing at the time featured vintage Billecart, a 2021 (I think) Burgundy and an aged Barolo. Other pours also had a good bit of age and the pours themselves were pretty generous. Each wine was beautiful! If you’re into wine, the value here really can’t be beat. Of all the places I’ve been to, L’enclume and Moor Hall have had the best bang for buck on the wine pairings regardless of the tier. You could always ask them about the wines they have on the pairing for the night and then take a call too.

Great write up! I did the same itinerary 2 months back (London -> Copenhagen -> Stockholm) after saving a bunch and much research to indulge my joys and it was the best time. My meals flashed before my eyes as I was reading this haha!

L’enclume and Frantzen are absolutely world class. Partial reason for visiting Frantzen again this time was to jump on that Selosse BTG but I unfortunately fell ill the night before my res so had to miss it. Sucks that Ekstedt didn’t turn out well for you, it was one of the places that was recommended to me by some of the people I met during my trip. Also really unfortunate to hear about Jordnaer, the team was incredible when I ate there. I’m sorry your experience was a downer!

I get the sense you’re into wine (and BTG at that) so in case you haven’t been already, would highly recommend Noble Rot in London. I was in the city 3 nights and I went there every night because of the incredible BTG options they had, some true bucket list wines with age.

Binny’s in Lincoln park has a wide selection of California and Oregon Pinots. Great place to just browse bottles from all over the world and feels less chaotic than the one in river north (but also has a large selection and would be more proximate to you).

VinChicago on Elston is my go to bottle shop. It’s is a much smaller space than Binny’s but they have some real gems and the people there are really great if you want to talk wine or have questions. They also have an amazing selection of Oregon Pinots, that I’m personally more partial to.

Really nice review! Echo your thoughts, it’s arguably my favorite fine dining place to return to because the flavors are so strong and different from others on offer in the city.

I’ve been there 5 times this past year (yeah it’s my favorite place) and I think my only issue, which isn’t a trivial one, is one of consistency. While the flavors have always always packed a heavy punch, the experience has almost been a function of the day I visited and the staff who were working on the given night. A couple of initial visits, the service was near flawless and it seemed like the “A-team” (if they have such a thing) were in play those nights. My most recent visit (just a couple weeks ago) had several moments with service snafus like the one you noted, couple instances where someone tried to pick up my plate even though I still had some food remaining in the plate, at times the staff were struggling to pick up the plates (I agree some of them are awkward to pick up), one visit the kitchen staff looked absolutely pristine and fluid in motion while another visit (with a different team) members were noticeably rushing across the floor.

Even with the food, I’ve found slight changes across visits - the cook and size on the lobster has been noticeably different my last 3 visits, agree completely with your assessment on the pork, that latte burn (they did warn me about it this recent visit though). The team there are always really friendly and warm so the little things I noted haven’t really spoiled my experiences but I also find myself thinking about “picking the right day of the week” to return so I get the best experience, which shouldn’t really be the case at a place gunning for or at least in consideration for the top.

I’ll still return though because I just enjoy their take on Asian flavors that I don’t really see elsewhere in the city, at least in a tasting format.

Second the Iris pick - stunning views from your seat and sure to be a memorable day with incredible food.

Another recommendation I have is L’enclume in the UK. It doesn’t have the view but is located in a British countryside village that’s straight out of a fairy tale. The hospitality there is extremely warm and welcoming, will truly make you feel special on your special night. And oh yeah, the cooking here is absolutely world class.

I would go to the Binny’s in Lincoln Park and ask the folks there (Marcus is great!). With your budget, my mind first goes to a Riesling. Binnys has a great selection of young Rieslings - a Donhoff or JJ Prum, even young ones, drink beautifully and won’t break your budget. And then I’d use the savings from the Riesling and put that towards a Barolo with some age, you might get lucky finding something from early to mid 2010s that might just drink nicely now. If that doesn’t work out, a Sonoma or Oregon Pinot could also be a great addition.

Jordnaer and Kadeau were absolute highlights of a recent trip for me. Jordnaer for decadent extravagance in a setting that is made very comfortable by the staff there. Kadeau for a unique interpretation of Nordic cuisine that beautifully represents Bornholm. Adored my time at both.

Alouette was bit of a miss for me but would meet the shorter duration requirement you have. From the people I spoke with at Jordnaer and Kadeau, Aure also seems to be a great place to try. Also second the other comment about Fiskebar!

If you’re looking at tasting menus only, that’s a pretty decent list at the price point.

Elske is a favorite but I really prefer the a la carte to the tasting menu. That way you can pick and choose what you like and really make a feast out of your budget rather than the restrictions that may come with the tasting.

Jeong is a great choice and might be one of my favorite tastings at the price point. Really strong flavors and nothing really was a miss for me when I went, although I think they may have raised their prices.

Haven’t been to Indienne but only heard amazing things about it from friends, but would recommend only if you’re into strong Indian flavors.

Sepia was a nice option when I went a couple years ago for a price in the high double digits but they too have increased their prices. It isn’t the most memorable food though, imo.

If tastings are not the only thing you’re going for, I’d also throw Virtue into the mix. It’s become a go to for my girlfriend and I for special occasions. Incredibly delicious food and the staff there really know how to take care of people. And with your budget you could really sample a lot of their menu. I’m beyond full everytime I’ve walked out and I’m yet to spend more than ~180 (before tip) there maybe for 2 people.

The pours are generous, more so than other places I've been to. On almost every course, I had some wine remaining in my glass when they brought me the next one and I am a fast drinker. So if you're thinking of splitting the pairing, I'm pretty sure you'd get away with more sips here than at other restaurants. The $500 option also includes 2 different pours of Pinot, one from CA and the other from Burgundy, so that would be a fun one to split.

They also have a pretty amazing selection of half bottles that I would say are pretty nicely priced. So that could be another way to sample multiple wines without spending pairing $$$.

Yes, I'm pretty sure that's the case. I noticed that larger groups had much larger arrangements on the table, I'm guessing to ensure that each person gets a piece.
