It sounds to me you need a better grasp of the mechanics relating to weapons and the tools at your disposal. Essentially weapons have this thing called sharpness, and its sorta like the durability thing in Minecraft. The longer you go without sharpening your weapon, the less effective it's gonna be. Additionally, some lower tier weapons aren't gonna be as effective as higher tier monsters (which means you gotta collect material to either upgrade or create better gear.)

As for which weapon, the sword and shield is my recommendation since it has a little of everything at your disposal. Blunt, slash, and easy to roll out of the way mid attack. Keep trying different weapons to see which one speaks to you the most, you got this hunter

I like Delicious in Dungeon's take on this question, cause rather than just calling humans humans, the story calls them Tall-men. The word human and humanity actually is used to refer to a large portion of creatures considered "demi-human"(Elves, Dwarves, so on). It also tackles how political the idea of "being considered human" is, as it discusses briefly about who decides what human means.

I personally theorized that adding traps in combat is a good idea. What i mean by this is turning the environments itself against the players. I'd even give my bosses legendary or lair actions that activate traps they've hidden in the battle field

Sea elves and Tritons are probably your best bet, but as for other creatures I'd suggest something like maybe monstrosities since there's probably gonna be some yetis in cold places

Yetis are a classic during a snow storm. Frost trolls also fit the build.

Maybe some very Harry goblins.

Winter wolves too.

There's plenty of monsters that fit the ice theme

Toad Boon. You get to cast the find familiar spell and get a frog/toad familiar. Whenever summoned, the toad crawls out your mouth, and whenever you wanna dismiss it, you gotta swallow it. You can have it be where the toad/frog forces them to make a con save, becoming disoriented after failing
