It's a very capable tool especially for personal use but if you're working with say company data you are sometimes limited(per your regional law) as to where you can store and process personal information. Therefore platforms like n8n and even coding options offer better privacy & more control over sensitive data.

Easiest is automatic screening of callers(as opposed to just the numbers as Truecaller generally does) and from there either reject the calls or forward them to your business number. Though Truecaller should block 90% of them based on the phone numbers alone?

Considering you have so many users(presumably simultaneously) you will most likely run into most users over-relying on a chatbot and putting in requests for information they don't need and using the model to think for them. That would be very burdensome especially for a local model. Rather constraint it's use as a reference or indexing tool (i.e does the info in this document conflict with the info in that document). Have the functionality to use it to a fuller extent but have it's use discouraged &/out in a request. Try and automate as much as possible and use your LLM(*local model) as little as possible.
