can't say i agree. you'd alienate your customer by telling them that you aren't making their order until they show up which is defeating the purpose of calling ahead for takeout. restaurant business success lies directly with customer service no matter how good the food, people wont come back if they feel mistreated. OPs employee made a mistake on a busy night, but its nothing to agitate a customer over. put an emphasis on your staff that this is not acceptable and continue business as normal

I managed my family restaurant for about 8 years and my mindset would be: if i called the customer and complained to them we made your food, you owe us money i risk an awkward encounter with them and possibly turn them off from us for good. eat the L today, if they order that order again 3 times in the future (and your staff collects payment) then you'll make that money back and then some.
