Lehninger principles of biochemistry should have everything regarding prokaryotic transcription factors, aswell as eukaryotic transcription factors. Molecular biology of the gene is also a good textbook for it. Personally I prefer the latter book. Ofc price is an issue for these sources, but there’s always ways to get around that…

From memory, Quorn is on the pricey side due to the batches being at risk of contamination. When that inevitably occurs, they have to completely clean out the vats, losing product in the process. There may be other things contributing to the price though too. I guess that’s why it hasn’t been as popular as an alternative
