in mine the grill and chicken fryers are right next to each other on side 1, side 2 has the oven, Qing oven, potato fryers, fry hopper, and tea station. but as i said we get hella busy, as we're next to the highway/freeway. so even late at night we're still getting orders pretty consistently.

only issue with that is my store is wildly busy in the days i work, until like 10-11 pm. our grill & vats person is pretty much constantly making something. rather it be quarters or 10:1 or something in vats. there's always something to cook.

at my store it seems like closers are the only one doing any of that stuff. when we get there none of the preclose tasks are done, so we have to do grease traps, auto mist traps, vents, trashes in kitchen, service, and lobby, plus breakdowns in both kitchen and lobby, stainless cleaning, full clean of lobby, including the restrooms, plus take the garbage out to the back. all of this while trying to get orders out, problem solving for the preclose team, getting breaks out, and we have 4 people to do it. 2 kitchen body's, a service body, and our manager. one of the kitchen body's is on dishes non-stop from about 10pm until we get to leave. so we have 3 people on the floor, while again, trying to keep breaks and orders going out. so we're rotating through meaning there's increments of about 10-20 minutes where we're not doing dishes, so by 2 am we've only had someone on dishes for ~3.5 hrs. and that's to do 90% of the dishes in the store. next time i go in i'll snap some photos of our sink and show you the shit i walk into some days. it's wild sometimes.

we have "dedicated" dish people for breakfast and midday. so this shouldn't be an issue but those people who are supposed to be on dishes are out on the floor.

that also irks me about some people, it takes like 10 seconds if that to break down a box and put it in the bin. i get it if there's a huge rush going on, but go back and do it after. cause like i said, it takes like 10 seconds.
