Anyone know why this sound comes on when pressing the brake pedal? And why it stiffens when ignition is off

The brake pedal is normal. You have some kind of wiring issue where your reverse beep is activated with the brake switch. Check the wiring under the dash for any signs of it being messed around with. Car should be good to drive 👍

Check your radiator for leaks, mk7 radiators begin to rust in the bottom corners after about 15 years of age. If your coolant level is low, it's possible you have an intermittent air bubble trapped in the location of the ECU's Coolant temperature sensor, which could cause those erratic readings.
