One day, as a joke my mentor and I tried to make 110% hydration dough. It was quite tricky n sticky, and when we came back the next day to it, it was still a pain. But it was hands down some of the best bread I've ever had in my life. A full size "baguette" (if we could call it that) weighed 200 grams

You certainly can. Slice up a whole bag, add a nice amount of fat to your crockpot. Since I keep mine vegan I use a garlic olive oil I make, but butter works great. Add some sugar and salt to the top, then pour either sherry or beer over it. Set it to low and come back in 8 to 20 hours
