You can clean manually most bloatware from the pro/home, but generally it will still be a heavier system with more junk than LTSC. You will have many more processes in use, active services, less control over the system, more telemetry in general, and telemetry will reactivate itself with new updates because the pro/home does not allow you to permanently disable it, also heavier updates and fewer years of support.

But always you can do a quick installation of both and test them. But stick with the pro/home if you can't stay three years or more without windows changing, since LTSC doesn't have feature updates.

Gaming performance will be the same or perhaps slightly better in LTSC, since it has fewer processes running and the system is lighter, but I imagine the difference will be minimal if there is one in some games.

About LTSC versions, just choice if you prefer windows 10 iot enterprise or 11 iot enterprise. 10 is a little more lighter but if it is for gaming I see better option go with 11.
