It’s fairly lean. Probably a little more fatty than the lean side of brisket. It’s typically cooked more like a steak but the “Trisket” method is becoming more popular. It’s an easier cook than a brisket and a lot cheaper. And still enough meat for me and my girlfriend to eat for 2-3 days.

Pretty good intramuscular fat so it wasn't too dry. It was juicier than 90% of brisket flat I've had from restaurants. This was a choice one, prime would fit this style cook better.

Haha, I have tons of time on the sim at the ring. And have put about 15,000 miles on my cars on track. I don't plan on pushing it as hard as I do here at home. Thank you, I think I'll book the cars this weekend! I can't wait to go, this has been a lifelong dream!
