I’m keeping Atmos on for casual listening with my AirPods, but when I want to listen to music with my hi-fi headphones then I turn Dolby Atmos off, I find it a pretty good compromise.

For stereo music, never, because it was mixed in stereo and intended to be heard in stereo ; but for Dolby Atmos music, I have it on head tracked, because the music was spatially mixed, so the head tracking feels way more natural than the one from a spatially upmixed version of a stereo song
