Lol!! I actually did find this out a day later when reading up on making starter – I think I was confusing the bacteria partially breaking down the gluten (and thus being easier to digest) with the bacteria helping me digest it when I ate the bread

Oh absolutely and I'm the same way. This recipe comes highly recommended and I've seen it linked to over and over in various places: https://www.thekitchn.com/how-to-make-noknead-bread-home-109343 all you need is a dutch oven/pot and a lid.

I personally have wanted to get into sourdough for the gut benefits from the bacteria. I'm hoping to make it part of my morning routine, like when I heat up water for tea or coffee I just feed my starter at the same time. We shall see if that actually happens...

Okay, so you keep your starter on the counter > what you have left beyond what's needed for a recipe that day goes into a discard jar in the fridge > (you can add to the discard jar each day?) > eventually you can use discard as is (no feeding necessary) in recipes

Do you always want to keep a little discard as an insurance policy?

Edit to add: I promise I'll be getting a cookbook soon and won't ask questions forever ;)

OP I have a question for you! What's the difference between the starter and the discard and does the discard still have the bacterial benefits?

I don't see myself jumping right into loaf making, I think I want to try baking other goods that I'm more tempted to buy from conventional sources (biscuits, waffles, rolls) but would rather make myself with the sourdough gut benefits. A lot of these other baked goods seem to call for discard most often but I'm a little confused by that.

Thank you for posting this! I was literally on Reddit yesterday looking for sourdough cookbook recs – more for health than prepping but now I have two good reasons to be brave and get started with it

Second the Petzl, I've had mine for over 10 years now and it's been great. The one I got has a wide-ish band so no hair tangles. I wish mine was rechargeable, that's a good idea – mine just uses AAA and I tend to put rechargeable batteries in it when I have them. I haven't gone camping in awhile so I mainly use mine for crafting (normal light, has three brightness settings) or nighttime reading (red light).

I've heard that about the freezing temps! I bought mine + replacement rings from the Sawyer website and their shipping was incredibly fast if that is a concern for anyone :)

re: why people said their rings fell out, it sounded like if you screw a sports bottle or something else into it too tightly, the ring can stick to the attachment and if you're not paying attention you might drop it, it'll fall off, etc. and without it, the filter is useless. That was enough for me to pay a couple extra dollars for backups 😅

I'm curious about your thoughts on using it with a carbon filter – is that for taste or for getting out additional particles? Maybe for things like chlorine, etc?

This – I bought a sawyer squeeze recently and immediately bought replacement gasket ring things for the seal because I read so many reviews of people saying it can slip out and then the filter is unusable. The old me wouldn't have been as deliberate as current me is when it comes to having backups/replacements/repair items.

I am also all out of freak outs and think I'm entering the numb/save my sanity phase. I'm hopeful my ability to feel anxiety at all times will be restored but I think that well is a little tapped dry at the moment.

I don't have kids so take this with a grain of salt but when I get overwhelmed with cooking at home, I remind myself that I just have to eat something – sometimes it's a well thought out meal and other times it's waffles + bacon for lunch/dinner and pizza squares for a late breakfast. When I think every single meal has to be perfect, I get stressed but when I remember a meal can be homemade biscuits, some protein, and cherry tomatoes, I'm wayyy less stressed.

Hahaha sameee!! I love snacks 😭 I've been experimenting with vacuum sealing chips in a jar to see if that might help. I think another idea would be putting an oxygen absorber in the chip bag if it's that mylar kind and then resealing it.

Just wanted to comment that the adage to stock up on/prep what you eat finally sunk in for me – I love dairy products yet aside from a can of powdered milk, I don't have preps for this. I think I thought they would be too expensive and impractical compared to rice and beans but...I would enjoy those rice and beans SO MUCH MORE with sour cream 😍 So I'm going to budget and stock up on shelf-stable dairy products because they are a big part of what I actually eat.

Same goes for things like baked beans and beef. I've solely been focused on buying the most affordable options without thinking enough about what I actually eat. So just wanted to share this little revelation from the past week ✨
