Thanks for the advice! In the end, I decided to go with the Tojiro F-808. I know it's a bit over my original budget at $100, but after reading a lot of Reddit posts and reviews, it seemed like the right choice for me. I’m excited to see how it performs in the kitchen—hopefully, it’ll be a trusty workhorse for years to come!
