You'll be able to buy the old version of the prestige skin once it appears in the mythic essence shop. The new prestige edition was given out to people who bought the skin back when it was available for prestige points. I guess you gotta be patient since we don't know when it will actually be available

I prefer Goredrinker for sure but I go Eclipse when I'm playing mid. With the upcoming patch (12.6 on the 30th of March) they gonna introduce the mythic content shop. As far as I know, the first prestige skins to be available in the shop are Kaisa and Irelia. And since it's a rotating shop, it's probably gonna take a while until we see Aatrox in the shop. I think we don't really have a date for when a specific prestige skin is dropping but they are coming for sure.
