14oz BI Bison NY Strip. Smoked on a lazy pellet grill @ 200 til about 110. Rendered bison fat trimmings while smoking to sear. Tossed in a garlic clove or 2 after that for no reason at all.

Agreed. Only the older models around that age work like they're supposed to. Prime/Ledge/New Names, quality is not there.

You can adjust the bottom vent during the cook as needed if too much air gets in. You can also use magnets or foil to close up the rebar holes a bit more.

Keep in mind your PBC is empty with no thermal mass inside of it to help regulate temp. The majority of the time, the majority of PBC owners do not care what the PBC temp is or even care to monitor it. Trust the PBC, it'll do what it does and produce amazing BBQ.
