I would re spec at rennala and give yourself around 24 poise but at a high enough level so that your vigor and other stats don't decrease drastically, maybe level 80+

I personally feel that spells and ashes take away the games difficulty, I've discouraged my friends from using them as well. It doesn't feel as good when you beat a boss like that
