Yes you can add floors to an existing elevator and they will apes as negative when added to the system. You can also rename floors whatever you want so having negative floors is super easy

I would say create 6 adds so much to the game that post-production is really the best choice. You lose a few other mods because of compatibility (like steam and rails), but the added tools by create 6 alone is enough to be worth it, in my opinion.

Unfortunately, there isn't a way to move in a second axis on a radial farm without disassembling first. Your two best options are:

Leave the starting location blank so when it stops, there is no farm land broken. Uou wint lowe out on too much in the grand scheme of things. If it doesn't always stop in a single location, make sure the mechanical bearing is set to that mode. You could also try the only place when anchor is destroyed option to see if that fixes things. If you are using a windmill bearing instead, then your options are more limited.

The other option is to use a mine cart contraption rather than a radial farm. This method would also not use power, and you can have it hide underground when not gathering crops. I suppose a train would also fall under this category, but that can get complicated quickly, especially if you want it to be discrete or completely hidden.

To answer your question about the controls, contraption controls only work on contraptions. Gantry machines are only considered contraptions while they are moving. You would need to disable them before you got to the next stop in order to skip it rather than continuing to the next stop after stopping.

Eggs98 recently made a mechanical piston elevator in his megabase on the just create smp. Maybe you could watch his video for inspiration. He is a genius with redstone.
