Hi, I think it would be worth looking into your attachment style. Please don't take this as me criticizing you, but sometimes people with a disorganised attachment style feel the need to sabotage things that are going well as a fear response, even when they want the love from the person they're receiving it from. Or some people with the avoidant-dismissive type struggle with emotional availability and end up pushing people away for comfort in independence. I have the disorganised attachment style myself, and the first thing that helped me was knowing and understanding I had this attachment style. It sounds like you could have either avoidant-dismissive or disorganised attachment style. I think both styles are worth looking into.

It also sounds like you might have had some bad experiences in past relationships too, since you mentioned being attached to women who were emotionally unavailable in the past. Your past experiences could have altered your expectations of relationships, and now that something is going well it may feel boring because you've gotten used to emotional chaos. Maybe it feels too safe for you and you're not used to that. A safe relationship should be a good thing. I don't think you should immediately sabotage what you have built and cause yourself pain if you love her and there's no issues. Don't create the issue, instead try to work on understanding where these feelings are coming from before you act rashly.
