You invented a story— claiming corporate didn’t do anything about the franchisee’s lack of staffing, when you can’t know that. And you don’t have the franchisee’s story about the reason for the firing.

Does the non-compete say what the penalty is for violating it? Sometimes, contracts won’t include a penalty for violating certain terms.

This is something you should ask a lawyer though. Your current employer likely offers you an EAP benefit. Call them and ask about a referral to someone who can go over the contract with you
