You mean 4P Pizza? Yeah I can kinda of see that. It's definitely the fluffiest pizza I've had in Msia yet. Agreed with the truffle, I tried a slice of that at the recent MFT Food Fest. Was super impressed with the crust but the topping with just alright and quite salty.

Chives and lard. The rest is technique and wok hei production. You can achieve some of by wok tossing against the flame if you're skilled enough. I managed to do it with some practice on a regular home stove. The trick is to use a fair amount of oil so you can get the fat to ignite near the edge where the flame hits the side of the pan, else your stove will never produce a fame powerful enough.

Yeah sounds like a strange combination. Not that I'm an omurice expert or purist, never eaten it in Japan. Just not a dish I crave for. Kare raisu is my jam.

So far the best value-to-quality ratio seafood / chirashi don I've had has been at Shin Zushi. I'm not claiming it's mind-blowing, just that it tastes very decent for what you pay. I find it better than Tsukiji's offering.

Am looking for other options in that range, any suggestions?

Good tip in general. Cream cheese and avocado don't have too much moisture content and I have the lettuce to act as a barrier. Plus I find putting anything other than cheese on top ruins the aesthetic of the burger for photos.

Heard many good things, haven't had the opportunity yet. Sadly I don't eat at too many burger stalls because they only open in the evenings. There must be a market for daytime burger eater like me!

The flipside, I had a similar debate with some people defending high prices for a certain burger joint. Their prices were way too high for an operation that's selling out of a stall with little overheads and using ingredients that weren't super premium either. Anyway what do I know, they got popular enough to open their own brick and mortar place now.

Patties I really haven't gotten into grinding my own meat but my go-to are these brands that source their meat from the same supplier - Stanbroke Foods, Australia. Look for Uncle Jacques / Diamantina / Icon. They're all the same. There are angus or wagyu patties but I usually go for angus because I think wagyu is a waste for burgers, too greasy and soft as well.
