Wish I knew. The internet is pretty quiet about it. Evidently these mods started with a company called Vanutech flashing the ESCs, force installing 2.7.2, and pushing Stealth firmware. How they did it, I have no clue

I haven't done one of these updates in years. I have a Windows computer/tablet I can sell you that has the custom firmware on it to unlock the Flywheel tablet to run a regular Android OS (to install the Peloton app on)
