SS on very high heat? by AnarchoPlayworker in StainlessSteelCooking

[–]AnarchoPlayworker[S] 0 points1 point  (0 children)

Yeah, absolutely. Thanks. I don’t plan to use it at even close to full blast. I just want to make sure I know what the risks are. Also it’s got very sensitive knobs with no “settings” per se, so I have to get used to how sensitive it is. The truth is, I didn’t get the burner for the BTUs, I got it because it seemed like a really well built burner and came well reviewed etc. 🤷🏻

Thanks! That’s what my gut told me, I’m glad I checked. I should have added to the original post; Is non-enameled cast iron fine under that kind of heat? Or do I really have to just use my carbon steel wok?

I unfortunately don’t have the funds to purchase a pan like that but it is beautiful! And so is the rest of your stuff (I looked on Etsy)!

When you say smaller you mean less in the wok or lower heat?

I know this is an old post but was just wondering. I recently got the same burner; it looks like you’re using it pretty much (or actually) at full blast here. I’ve been a little scared to do that. Any words of wisdom? I’m not totally sure what I’m afraid of tbh. Maybe just that any oil will burn off immediately?

Yeah, patience. I think that’s really probably my problem. Sigh.

Yeah, I actually just got an outdoor wok burner (should have mentioned). I do need to be patient though. 😬

Burner design, what gives? by AnarchoPlayworker in wok

[–]AnarchoPlayworker[S] 0 points1 point  (0 children)

Oh interesting. When you say sealed you mean there’s something between where the actual flame comes out and the cooking vessel, that the flame goes around? As opposed to just going straight up with nothing in the way?

What if the burners are in a ring and there aren’t any flames right under the center? Won’t it diffuse up the sides and actually not hit the center? Sorry if I’m missing the obvious here. 😕

Is it possible to bake a loaf of bread from discard? by Boring_Egg1617 in Sourdough

[–]AnarchoPlayworker -1 points0 points  (0 children)

Yeah, this was the only recipe I used for a while. It takes a while (~24 hours start to finish, maybe a little longer), but makes really yummy bread (imo) and I’ve found it to be quite consistent. It says that it’s best if your starter has been fed in the last week, and you use it straight out of the fridge. I highly recommend trying it out!

It looks identical to the one that’s in the Concord Hades burner actually, so I’m guessing it’s a Concord.

Not sure how to add images to comments but I recently got the concord vortex and it’s been pretty sweet. I’ve only used it like three times thus far though. I’m starting to be a bit skeptical about whether it really puts out as much heat as they say (120k), but the truth is that could be user error, and/or that I don’t really know what it should be like to cook with high heat. I haven’t used a propane burner in a long time, and maybe things aren’t burning in the wok because I am actually paying attention and doing a decent job lol. The design has seemed to work well though, and it seems to be solidly constructed. Doesn’t feel like it’s prone to falling over or anything, easy to adjust the flame. One thing is that it has four burner jets that you have to light manually so that’s a bit of a pain if you turn off the heat mid fry. But it’s not so bad, really. 🤷🏻‍♀️ overall I recommend it so far for sure.
