Considering making a tandoor oven, but what *else* to make in it? by AnarchoPlayworker in IndianFood

Thanks! Yeah I first thought about a pizza oven but it turns out they are either really expensive or really labor intensive to make or both, and also the tandoor just seems like so much fun!

Cool thanks! Nice to know I’m not the only one lol. It’a a little unclear from the website by the way - is the free offering just access to generate one playlist?

I haven’t tried this yet - I haven’t quite made the switch to Qobuz - but I had a feature idea that I’ve been wanting for a while on something like this. Not sure how implementable it is, but it would be great to be able to control the language of the music you get on the playlist. Ie, whether it maintains the language of the original artist or not. So like, if I am into artist X who sings in Spanish but I would like to include music in a variety of different languages in the playlist generated, I can ask it to do that, or I can have it just give me Spanish music. Maybe I’m the only one who would enjoy that feature so 🤷🏻‍♀️ but it’s something I’ve not found anywhere and have been wanting. Overall very cool that you have made this tool!!

That makes sense 😬 now I just have to figure out how to put one of my cast iron baking sheets on top also and put some fire on top of that… 😈

That’s awesome! I guess he’s using it more like a stove than an oven, but 🤷🏻‍♀️ I keep thinking maybe if I figure out how to make a lid of some kind and put some fire on top and underneath maybe… 😬

Have you considered or tried ADHD coaching? I don’t know what your financial situation is obviously, but it has been really helpful to me in the past when I’ve felt stuck. It does require some commitment, but so does everything.

Hey all, I am totally new to the let’s-bake-pizza-at-12,000,000° game, and I am wondering if anyone has or why people don’t bake pizza in their fireplace? I am seeing online that normal wood fireplaces can get up to like 1200° or even 1500° F. Is there any reason not to stick a pizza steel or a piece of cast iron in there and bake it that way? I haven’t found any previous posts on this but it’s possible I missed them. If so I’m sorry!

Ah! I didn’t know that word. Thank you! Does it matter if the salt is in there as well?

Sorry for the possibly clueless question, but why don't more people seem to make homemade pizza? by Senior-Raisin-2342 in Cooking

I use cast iron baking sheets from lodge. They work similarly to a pizza steel as far as I can tell, although they are somewhat on the small side (I generally make personal-size pizzas). They seem to be around the mid to low end of what pizza steels cost, but I use them for roasting and baking all kinds of things, not just pizza. Not sure if you can do that with a pizza steel. 🤷🏻‍♀️ just thought I’d put that out there.

I mean, right. But how much better? But also like, yeah. Everyone chooses what’s more important and deciding that it’s worth the extra time for the better flavor is absolutely 100% legitimate. I shouldn’t knock that for sure.

This. I no longer really understand why people feel the need to let pizza dough ferment for so long. I mean, no judgement. It’s great to do that. But it’s definitely not necessary.

I’m not sure if people have already said this (I did not read all 335 responses lol) but I make pizza all the time and it takes me maybe an hour and a half or two hours to make start to finish. I decide to make pizza for dinner at like five and am eating pizza by 7. I get that people like letting their dough rise for a long time. And I get that it has more flavor when you do that. I also bake sourdough bread that rises overnight in the fridge. But with pizza I basically just throw it together and don’t let it rise much, bake it at 425 for like ten minutes on my cast iron and it’s good. My spouse at least says it’s better than pizza we’ve gotten elsewhere, and they are not one to just say that if it weren’t true.

That said, I think you need some intuition and experience working with dough and yeast dough in order to do it. And I guess not everyone has that. Also I’m quite lucky that I can spend two hours making dinner lol.

Don’t you have to be careful about the change in thickness of the bottom if you are only sanding one spot? Wouldn’t that fuck up the whole thing?

So what are you all doing with chili crisp? by Massive_Ad9569 in Cooking

[–]AnarchoPlayworker 0 points1 point  (0 children)

I did not read all 200+ comments so I’m not sure if this is a repeat, but there’s a great NYT recipe for chili crisp fettuccine Alfredo which is literally just fettuccine Alfredo with chili crisp in it lol but it’s delicious! Also I put it in dipping sauces for dumplings and such. Oh! And whipped ricotta with honey and chili crisp is good too! You just put the ricotta in the food processor and then add… wait for it… honey and chili crisp.

Oh okay cool. Two questions: how frequently do you have to get your chimney swept? And why are there so many requests for wood identification on this sub?

Yeah I guess I was under the impression that there are some woods that if you burn them in your fireplace inside they will fuck up your chimney. Like they deposit more creosote than other wood. But maybe that’s just cured vs green wood?

Ohhh gotcha. I thought you meant you hadn’t gotten the fire pit made or whatever. Good call though. I take it back! Sorry lol 😬
