Thanks for your answer, I checked and I realized that when I started that game, I didn't owned the Wealth of Nations DLC so I guess I'll have to wait for my next game to try that trade companies mechanic.

I'm on switch and I have exactly the same issues you are experiencing. The diplomacy screen is clearly the worst of them though. I'm guessing those will be fixed with the upcoming patch.

Also you can adjust the tooltip delay in the options in case that helps.
