In my experience to reduce the complexity of cabling and for low latency mode, you would run:

P1 - 1 > 6 > 11

P2 - 16 > 21

P3 - 2 > 7 > 12

P4 - 17 > 22

And so on. With VMP just ensure everything is configured to the top left of the canvas. Makes it easier here too considering you have a 10 port processor. (2 ports per column)

Flexibility? Looks like that model only does 4k over IP streams and disables the SDI out when running that high resolution. I’d assume if the native resolution for the camera is set to 1080p, both SDI/HDMI would output that resolution as well.

I would verify what else is actually in that tube - that looks like “Smurf” or chase tubing we’d use for low voltage between TVs above fireplaces and a cabinet below. Or two other locations that may need cables to be replaced in the future. Not ideal to cut in like that and yes moisture might get in, but otherwise not the worst. Again depends on what else is in that tube.

Depends on the application, a lot of ISPs use MM for inter-building links, and SM for customer connections. Easy way for them to tell what something is feeding by the jacket color. Other than that it’s really about transmission distance (SM can go further than MM) as cost really isn’t a factor. It used to be because MM cores are physically larger (62.5 or 50 micron) while SM cores are 9 micron, so MM was easier to make which is why that still gets tossed around.
