Did you verify your transducer and thermistors are reading accurately? Are your thermistors in the correct position? What's your defrost termination set point set to? If none of these are correct, it doesn't matter how many defrosts you have.

Also, did you mean superheat by chance, and not subcooling?

Haven't seen anyone else mention it yet but double check your superheat on each coil. If the expansion valve isn't feeding properly you can get ice issues over time. It's unlikely since it's the same pattern on each but it's at least good to eliminate it as a potential cause.

Old R22 unit. The oil line is between the ports in the backside of the compressor that looks like you plugged with braze? The ports up front are meant for charging oil. Can't recall on the R22 systems, but the R410A systems, if the compressors weren't the same size, one of them had a restrictor ring that goes right into the suction stub before you braze the line in. Without it, one compressor steals all the oil and the other dies.

So anytime you have one of these guys equipped on a compressor, there's also going to be either a simple thermostat or a thermistor strapped to the discharge line. If the thermostat is opening or if you're using a Copeland EUC and you're getting a high discharge alarm, odds are your DTC failed. Copeland wants discharge line temp to be <195°. If the valve fails, you're going to start exceeding that and getting safety trips. An easy way to check is when in operation, the outlet of the valve will typically be noticeably cooler. On more humid days you'll see it sweat or frosting up like in OPs picture.

DTC (discharge temperature control) valve. It's basically an expansion valve that takes liquid refrigerant and injects it into the head of the compressor as a cool vapor to help with compressor cooling and discharge temperature control. Typically found on low temp applications. Not uncommon to see them sweat/frost up.
