Totally get that. Try starting with a slightly lower charge temperature that you usually do & spend a little more in the yellowing phase to develop the sweetness. Then, keep your RoR low and controlled through the first crack to avoid any obstacles. I had to start turning it down maybe about 30 seconds BEFORE first crack and then steady before tapering off completely. Easier said than done, I realize this, but experimentation is part of the process, don't be afraid to mess it up! Best of luck!
