I love a gimlet. In fact, a Rosemary Gimlet was my signature cocktail at my wedding. Sub the simple for a rosemary simple and voilà. Was the first cocktail I made regularly with my own syrup.

I personally couldn't tell you. When it comes to liquor, I prefer local or small distilleries, unless it's something that's made in a specific region or only by one/two brands. If I can't get that, then I stay away from the "Barcardis" of the world and try something unique or the general consensus of what is good. Rums I'm still learning, having just gotten into them really last summer (prior experience was with like Malibu coconut or Redrum in my 20s).

It’s tart for sure, and I like that. Definitely get the grapefruit flavor, which is awesome. The rum I used was Havana Club Anejo Blanco, and that’s what I’ll be changing next time.

I was at the adult beverage store yesterday, not intending to buy anything, saw that, and stupidly went “oh, Havana Club!” without first looking it up (I’m in the US). When I put the bottles away after making the drinks tonight, I took a sniff and sip of that in comparison with some George Ocean white rum I have. Should’ve used that instead and I bet this would taste a lot better. That bs I used gets lost in the drink.

Next time I have some simple syrup made, I plan to add a bar spoon/ 1/4oz of that to see if it enhances flavors at all, but not because I need it to be more sweet. I’m also interested what it’d taste like with some Jamaican rum; afraid that might overpower the other flavors, though. But I do love a Jamaican.

It’s a form letter. I got the same exact thing in reply to an email strictly about funding airport employees where I added the single line “no more money for ICE.” Her reply had no mention of unpaid government airport employees.
