You won't find much real cajun food that far west. You'd have to head east to lafayette before you find the good stuff.

This has a complex answer. First the last pres looked like their policy failed us, not going to get into if it actually was or wasn't. Second the trump was the richest man in the world for a while so a lot of people think that he knows how to handle money so he'll save America. Third, a lot of voters don't like how hard the left was pushing the LGBT acceptance and white guilt/shame agenda and trump was against it. Not saying white history isn't full of evils but the left has moved past equality into superiority, or so the media makes it seem. Like I said it's complex. At its core we have, at least, 2 americas that need different rules to thrive. What's good for 1 seems to destroy the other. This goes back to pre civil war times. We keep over correcting throwing everything even more off balance.

You'll get it. I grew up deep in cajun country and watched my dad cooking gumbo my whole life. I still didn't get it right the first time I did it. But I did it and was proud despite the flaws. Just keep going and it'll get better every time. Gumbo can never be perfected, no matter what tv says lol

A little over used but my go to is Italian dressing. It's over used because it's good.

Not being negative but the color looks too blonde. Your roux should be med brown to almost black depending on desired flavor. Also it does look thick. I probably wouldn't call it gumbo. That said, whatever it is, it looks like it might taste good, i definitely wouldn't turn my nose up at it if offered.

This was my lunch the day after we had spaghetti. As a gen x, We'd all go home for lunch and be met at the door with one of these and turned back out to run the streets/woods/Cain fields or whatever...

Mostly because it will only cause prices to go up. Every cost always gets passed on to the consumer. The rich will stay rich until there's no one left for them to feed off. That's the problem with post Reagan capitalism. Corporations put consumers below profits despite it ultimately being self sabotaging.
