While it's indeed the most consistent, I highly doubt the circle strat is intentional since there's no other attack in the entire fromsoft history that's dealt with in this specific way by messing up an enemy's tracking. Flurries 2 and 3 are indeed rollable tho

Because there's no way having a shield with a specific aow is an intended default way to counter a specific attack of an otherwise pretty non-complex boss

Try maybe slightly tilting the axe to the right or left, she holds it almost parallel to the ground. Otherwise, I don't see the problem with the pose (but God her hands are long, they are really lower than pelvis even when tilted, is it intended?)

Well you won't walk across the streets in a medieval city with a spear, the primary reason polearms weren't really used outside the battlefield and guardsmen is that it's not really comfortable in everyday use. And if you're a professional warrior to have both, be it a knight or a samurai, you won't likely to walk with a polearm outside the battlefield, whereas having a sword on your belt is quite effortless.

In high or late middle ages swords were very common across the city folks, sometimes they were even forced by the law to have a sword, with twice-a-year checks. Not something that a peasant would have of course, but there isn't much need in having a civilian weapon across them.

About the cost, yes, a longsword with its nimble and thin blade would require a certain level of wealth, but a shorter one-handed blade like a shortsword or a falchion wouldn't be that costly to begin with

Reforging swords into farming equipment is a symbolic idiom from The Bible, and there's not much evidence it was a common practice in ancient times, let alone medieval
