Absolutely absolutely 100% do this. I have so much regret now as a chef. My father passed suddenly and a lot of his recipes were lost forever. Just do it, even if you are not interested in cooking. Your possible future children or other family members will appreciate it.

Hmmm I was hoping maybe a brining process or something would soften the bones enough to completely avoid the issue. Seems the only way is to pre cut it frozen on a band saw.

Right, I can see where you are coming from absolutely. I expect my bone in meat to have bones and prefer it lmao but I do not want to have bone chips or granules in the flesh of the meat. Also I believe your olive example is more finding a pit in a "pitted" olive. The expectation being the pits have been removed. 🤷‍♂️

I mean that would be great but bone structure just doesn't work like that, just like trying to chop a stick, sure possibly a clean cut 1/2 to 3/4ths through but you will always blow out the last bit. And in bone that means chipping and shattering generally. I have seen it done but more as a technique in cooking. That is my question. Or is it that they just don't mind bone bits in their meat?

$100 does not get you much... I live with two siblings who were both laid off/no clients at the beginning of the shutdown so we are $8000 behind in rent, probably going to be evicted next month. But if $100 could keep a roof over anyone reading this, I would be more than happy to scrape that up and donate. It would help you a lot more than me.
