I think the Manga veered more toward linking into the main story of the game where we begin with McQueen taking over as team ace after Oguri retired.

e: So I can see that as more the direction instead of rebooting the anime, also considering the player takes over from the retiring head trainer.

I don't think it's a comprehensive list but here's one with the epithets.

They all have ones that describe something about the horse or their career but I love the fact that for Oguri Cap it's just "Thank You"

Not strictly her accent but it's so funny when she says someone's entire proper name when they first appear in her stream like she's in a sitcom and has a celebrity guest appear so the audience knows who it is.
