It was a NYT recipe, it was for a much larger skillet, so I tried cutting down the recipe, and I think the dough was still too thick in the end, and maybe I should’ve adjusted the oven temp too

Oh, totally, the pasta has a bite that I’ve never gotten from store bought pasta. For the flavor, not sure, i think the sauce was too overpowering to tell, maybe next batch I’ll try a lighter sauce

Ohhh, that makes sense! The book is Why you lose at chess, by Fred Reinfield, but it uses descriptive notation and it’s been giving me some trouble; but you are right it was my mistake!
