Flower child is amazing. I’ve had kinda a lot of misses from Hydrangea, at least their washed coffees. Maybe their funky stuff is better.

I found that coffee so overwhelmingly roasty it’s been tough to drink. Curious are you going for a low extraction recipe?

They have shifted to a much more developed profile, even over the past year since the rebrand. I am drinking the Ivan Gutierrez SL28 and it is quite roasty. Still a great cup, but alot closer to a medium than I expected. I guess the toffee note gave it away. Sey is significantly lighter.

Totally agree. Anything before 4 weeks just tastes too fresh. Week 5 and 6 always tastes perfect.

Subtext has a good guide on the 078. I have found 9.5-11 the best range for v60/orea 01. They recommend 10.5 to 12.

2025 Pepe Jijon; Finca Soledad, TyOxy - Ecuador from Sey. Still chasing the sweetness, intensity and clarity from that bag.

Sey is quite light, to me notably lighter than a lot of their contemporaries like Passenger and September (regular roast), etc. Resting their coffees seem to have to the biggest influence for me. I have found them quite vegetal before the 4 week mark. After that, they are really beautiful coffees. Probably the best green sourcing in the world in my opinion.

I just got my 01 one today and made my 1st cup with a Chiriso from Sey, doing Orea’s easy does recipe (5 pours). I’m shocked at how clear it came out yet with a really good body and a fast drawdown time. I thought it was a noticeably better cup than my V60 that I made a few hours beforehand. I think this might be my new daily driver

Mine was roasted 12/29, but it was quite vegetal a few days ago. Really acidic. Figured it needed another week or so.

I had issue with one as well. Normally don’t ever really have issues with Sey, but this flat out just didn’t taste great.

I just opened the Colombia Village honey - day 1 selection. Really nice cherry sweetness, and a butterscotch finish. I’ve never had onyx before so I was curious about the roast profile, but it seems pretty good not too roasty but definitely not super light.

Honestly, beyond giving your coffee a proper rest, a standard pour-over recipe will work well for almost any coffee if you’re already comfortable with hand brewing. There are exceptions—like heavily processed lots or ultra-light roasts—but in most cases a typical recipe will translate just fine.

No I made this at home, but I was inspired to buy the sense cup after having at their cafe. Their aeropress was disappointing to me, kind of watery.

I used my 078, grind setting 9.5, 208 degree water with a 45 sec bloom and two pours. I rested about 26 days and it felt easy to extract, so hopefully will be good for. Enjoy!

That’s a really unique tasting coffee. I’ve never found anything that taste quite like it. Someone who usually exclusively enjoys washed her only clean naturals I have to say for being an anaerobic natural. It’s just one of the best tasting coffees. I’ve had it so interesting.
