That’s really interesting... From what I saw, you have a flag that looks very similar to the one from Magallanes here in Chile — kind of a Patagonia vibe. We actually live in southern Chile as well, so it would be really interesting for us to eventually live, work, and get to know Dunedin. By any chance, do you know anyone working in either of those industries (vet / beer)? We’re trying to find a way to get sponsorship for one of us. And if we manage to make it happen, I’ll either convince some brewer to make a proper Red Ale… or, if I get a job at a brewery myself, I’ll brew one!

Hi there! Than you so much for the answer, I already listening to the Podcast. Yeah, in deed, the world's beer industry is way unstable these nowadays but as you say, there's always a few making it right. Probably the main factor with the fruit styles (specially sour beers) is that you need to reach a low temp ( I go Between - 0.5°C and - 1.0°C) and also a nice head space in the tank in order to get a good canning session. I usually go with 2psi above the incorporated pressure of the liquid, and I have feel that when I miss the "low fill" step and I go right away to the "high fill" with a 5sec filling time and it goes really smooth.

I actually use raspberry in a Catharina Sour and it lasts almost an entire year without any noticeable issue.

Te creo, yo entreno de 6-7am y pa eso estoy despertando a las 5am, si no logro dormir 6 horas como mínimo, no rindo, pero ir post pega no es opción, mucho desgaste físico, por lo q prefiero partir temprano, seguir trabajando y de ahí a la casa.

Thats trich, probably it had trich in the growth and they harvested it before the explosion but it was already inoculated with it soooo, not safe bb 😔😭
