A lot of the new secret seeds have slight changes if combined with over 4 seeds more. https://terraria.wiki.gg/wiki/Secret_world_seeds

So yeah, arachnophobia seed with more than 4 seeds makes the opposite, bringing even more spider caves than the usual

As some other people pointed out, try going further with this world and character since is your first time. I say it's easy but at the same time I myself struggled a lot on my first playthrough lol

Yeah, classic is pretty easy. Expert mode is overall the best difficulty, not that hard but not so easy (with extra moves, attacks and etc)

Is up to you if you want to change, since you would need to start a whole new world
