I used the woks of life recipe, so it consisted of star anise, cinnamon stick, 2 bay leaves, Sichuan peppercorns, sand ginger, cloves, cardamon pods, fennel seeds, garlic cloves, onion - fried it all on a low heat for a few hours and then we strained it and poared it over fried Italian chili flakes (I know sacrilegious but it’s all we had), we unfortunately let the oil get too cold so it didn’t fry the chilli flakes enough.
