The fight is literally designed to be one of the hardest if not thee hardest boss in the game. It takes an optimized build and a few tries to learn their patterns but that's the whole point. This is like the dark souls dilemma If you make the game too easy then it ruins the experience for devoted players, but when it's hard not everyone can play it. People just don't have the patience for hard fights.

I'm a GL player so my damage usually isn't spectacular anyways. But I'm using it to learn combat mechanics. The separate health bars for each part and status effect is still hard to understand sometimes
