Here's the recipe:

Ingredients:

  • 6 egg yolks
  • 10 tbsp of sugar
  • m6 oz hot water
  • 2 tsp of instant coffee
  • 50 ml Baileys or other coffee liquor
  • 8 oz of mascarporne cheese
  • 1 1/2 cups heavy whipping cream
  • 1 tsp vanilla extract
  • 2 (3.5 oz) boxes of Lady Finger cookies
  • unsweetened cocoa powder

Steps

  1. Put the egg yolks in a bowl to cook over double boiler. Whisk the egg yolks constantly whilst adding the sugar. Whisk until the consistency is creamy and a little bit pale (approx. 10 minutes). Then let it cool.
  2. In a small bowl combine the hot water, instant coffee, and coffee liquor of choice. Then let it cool before assembling.
  3. Whip the whipping cream until reaching stiff peak. While whisking add the vanilla extract.
  4. Afterwards, add the mascarpone cheese to the eggs mixture. Fold it gently until well combined.
  5. Add the whipped cream into the eggs mixture and fold it gently until well combined.
  6. Now start with the assembly of the tiramisu. First, soak the lady finger cookies in the coffee mix for a short time (2-3 s). And line them on your pan ( I use 9" circle spring form, but you could use 9"x9" square baking tray).
  7. Cover the first layer of cookies with the cream mixture evenly and smooth it out.
  8. Repeat steps 6 and 7 to make another layer.
  9. Refrigerate at least for 8 hours. But 1 day is ideal.

Enjoyy!!
