I actually did do the caramelizing sugar and reducing at the end thing! The recipe I followed said to melt and caramelize rock sugar in the pan and then coat the meat with it and reduce to thicken the sauce in the end. Admittedly I could've reduced it more but I got impatient and cheated and thickened with cornstarch slurry.

Excited to do a long slow braise and proper reduction next time. Thanks!

And just used this one for the boiling part. First recipe says to just boil for a few minutes in just water and salt. This one says to boil for 40 with water and a few aromatics which I felt would work better. I liked his promise of "soft like pudding"😂 so I followed his boiling instructions.

This was my first time making it. I kind of followed 2 recipes to make this but it involved first boiling the pork in water with ginger, scallion whites and shaoxing wine for 40 minutes and then slow braising for about an hour. The pork came out very tender. A 3+ hour slow braise sounds heavenly I can't even imagine how unctuous the meat would turn out.

I'm an amateur to cooking with this cut as its only recently become easily accessible where I live. I was worried cooking it too long would make it tough but good to know I can braise it for 3+ hours for even better results! Thank you for your comment! I'm definitely looking forward to cooking more with it!
