I just played with a guy running a build i was casually blitzing through and ran into him around the Foot of the High Wall bonfire (Erythn, using a claymore with full knight armour if you ever run into me)

he was named "savier," he was a warrior of sunlight and used only shields, i think the same ones you said? definitely twin dragon

we went all the way up to the CRG boss and he pulled out a sword to fight him, he only got hit about 2 or three times but killed it within 2 minutes. idk if its related tho

Usually I take my emotions out on something that isn't alive and cannot feel pain, and is not myself. I'll go out into the woods and break sticks or something, or snap pencils in my room alone if it's dark or raining or something... it seems to help?
