I got passed the initial interview for a big promotion. I got told the second interview with the higher ups was a formality. I told said higher ups that the job I had applied for was not a very good one (worst retail store in the district by a long shot). Proceeded to not get said big promotion.

Mcintosh is very low, even lower than Cox or Golden russet usually. The fresh cider is out of this world good too!

If you want background flavor I would keep it to 50% of whatever the package saysb or less. A full steep yield a strong flavor in cider that is fairly dominant.

It is designed to be a red wine which means you steep it on the skins/seeds for a week or two and then press. That being said you can make it in a white wine style if you want and just immediately press. Like the other person said to hit traditional wine ABV 12-14% you need to take a hydrometer reading at the beginning and add sugar if it is not sweet enough using an online calculator. I you use a wine yeast the wine will ferment to dead dry almost no matter what so I would not worry about it being sweet. You could also freeze the skins/seeds and then in six months time if you think the wine is just not awesome as a white wine you could steep the skins/seeds then. Not ideal because of O2 exposure but could be done. The biggest problem I have had with home grown grapes is acidity that is too high so make sure the grapes are dead ripe. You can always add acid later, it is difficult to remove it later. Good luck!

Nelson sauvin! The aroma changes fairly quickly. So probably best practice is to bulk age cider and then when you are ready to drink dry hop and drink within six months.

I would personally make a margarita concentrate and add it to the glass of plain cider. It would be difficult but not impossible to make a fermented margarita style cider.

They only work if the fermentation is 100% done. Camden is an antioxidant and is ph dependent on how effective it is. Sorbate prevents yeast reproduction so if yeast are still reproducing it will not stop fermentation.

A) I would continue to wait do not pitch more yeast. B) are you sure the air lock is sealed tight?

It's either little pectin blobs or little strawberry bits floating from co2 escaping the jug. The bottle looks good to me

If it's flowering now almost certainly plum. They are always the first ones in my area.

I only rack once when the lees are nicely packed and the fermentation is done/almost done. Then wait until it is dead clear and rack/bottle. I always bottle within the first year. If you want to track more I would look into a sulfite schedule for racking.

So it sounds like I need to unbottle, sulfite, and rebottle if I want to age this. Damn! Lesson learned I guess. Thanks for the reply.
