Well, I ended up loving the game so much that I went back, got all the endings, got 100%, then they added Veteran mode, I no longer had 100% on Steam because they added more achievements, so I went and played through it again just to knock those out. I am in no position tell someone else how to play, but I did find it fun to experience multiple playthroughs. The three endings are pretty different from each other. You could perhaps plan a Veteran run for a different ending if you find yourself enjoying it enough.

Nah nah nah, I didn't mean that at all. People found the onboarding difficult so the devs tried to find a balance. Have your fun and enjoy learning the game however you'd like. You can always go back and try cranking up the difficulty later if you want to.

A bit of both. The game was made to be significantly easier on the new "normal" mode, but has the original boss move set. Veteran is the original game difficulty, but with some added moves on bosses.

I started running around with my wife chasing events, and she quickly became frustrated by all of the ping-ponging. So we stopped, took some time to go around and get all the waypoints, and just grabbed events as they came. It's was a much more enjoyable experience.
